In her new book The Slim Down South Cookbook: Eating well and living healthy in the land of biscuits and bacon she lightens up southern classics that are just as satisfying.

About The Book
The Slim Down South Cookbook instills the fact that deprivation doesn’t work long-term. By taking it one day at a time, Carolyn offers tips on how to navigate through sticky situations and avoid overindulging so you can maintain a healthy lifestyle. With over 100 delicious recipes, there are plenty of southern options your whole family will enjoy! Carolyn also stresses the importance of enjoying and cherishing meals with the ones you love – this is an important concept which I always stress.

Shrimp and GritsShrimpGritsSLIMDOWNDOUTH

Makes: 6 servings
Hands-on: 25 minutes
Total: 30 minutes

Parmesan Grits:
½ teaspoon table salt
1 cup uncooked quick-cooking grits
½ cup freshly grated Parmesan cheese
½ teaspoon freshly ground black pepper

Creamy Shrimp Sauce:
1 pound unpeeled, medium size raw shrimp
½ teaspoon freshly ground black pepper
½ teaspoon table salt
Vegetable cooking spray
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 ¼ cups reduced-sodium fat-free chicken broth
½ cup chopped onions
2 garlic cloves, minced
1 tablespoon fresh lemon juice
¼ teaspoon table salt
¼ teaspoon hot sauce
2 cups firmly packed fresh baby spinach

  1. Prepare Parmesan Grits: Bring ½ teaspoon salt and 4 cups water to a boil in a medium saucepan; gradually whisk in grits. Cook over medium heat, stirring occasionally, 8 minutes or until thickened. Whisk in cheese and pepper. Keep warm.
  2. Prepare Creamy Shrimp Sauce: Peel shrimp; devein, if desired. Sprinkle shrimp with pepper and 1/8 teaspoon salt. Cook in a large nonstick skillet coated with cooking spray over medium-high heat 1-2 minutes or each side or just until shrimp turn pink. Remove from skillet. Remove heat to medium. Add oil; heat 30 seconds to 1 minute. Whisk in broth and next 5 ingredients; cook 2 to 3 minutes or until thickened. Stir in shrimp and spinach; cook 1 minute or until spinach is slightly wilted. Serve immediately over grits.

Serving size: ½ cup grits and about 1/3 cup shrimp sauce
Calories: 235; Fat: 6.1 grams (Saturated Fat: 1.9 grams, Mono Fat: 2 grams; Poly Fat: 0.6 grams); Protein: 19.1 grams; Carbohydrates: 25.2 grams; Fiber: 14 grams; Cholesterol: 119 grams; Sodium: 749 milligrams; Calcium: 177 milligrams

    She is my old teacher at LSU!! I didn’t know she was writing a cook book!! My favorite recipes here (South LA) are crawfish etoufee, turkey gumbo, and of course shrimp and grits!
