In my new cookbook The Greek Yogurt Kitchen: More than 130 delicious, healthy recipes for every meal of the day, I have a wide variety of recipes that show how versatile Greek yogurt can be. From dishes like muffins to pancakes to hollandaise sauce to salmon croquettes, Greek yogurt can be used to make most any dish healthier. Here are three recipes from my new cookbook you can give a whirl.
Hollandaise sauce uses tons of butter to get that deliciousness. In my version, I cut most of the butter, and combine it with Greek yogurt along with the same delicious flavors found in this thick and creamy sauce.
Greek yogurt is easily used in sweet parfaits using fruit and nuts, but have you tried this savory version? Layers of colorful vegetables like carrots, tomato, yellow peppers, lettuce, and cucumbers and a layer of Greek yogurt mixed with chopped parsley and topped with a light balsamic vinaigrette make these parfaits a show stopper.
In these moist, delicious cupcakes, half the butter is replaced with nonfat plain Greek yogurt. Topped with a vanilla-flavored frosting, it’s a big hit with adults and kids alike!
