Healthy and delicious diabetes recipes aren’t always easy to find. For day 13 of National Nutrition Month, this must-have cookbook from Jackie Newgent, RDN, CDN features tons of delicious diabetic recipes, which is tasty for any non-diabetics. Any of Jackie’s amazing cookbooks are a perfect addition to healthy cookbook collection and this cookbook is no different. Jackie was kind enough to share her Spring Asparagus Stir-Fry recipe, which will be perfect for my future sister-in-law to whip up during a busy weeknight!

 

Spring Asparagus Stir-Fry

 

Spring Asparagus Stir-Fry
Serves: 4 | Serving Size: 1 rounded cup

Prep Time: 10 minutes | Cooking Time: 7 minutes

Ingredients
2 tablespoons naturally brewed reduced-sodium soy sauce
1 tablespoon honey or coconut nectar
2 teaspoons toasted sesame oil
2 large cloves garlic, minced
1 teaspoon grated fresh ginger root
2 pounds asparagus, ends trimmed, cut on diagonal into 2-inch-long pieces
1/8 teaspoon sea salt
1 teaspoon sesame seeds, roasted or toasted

Directions
1. Stir together the soy sauce and honey in a small bowl and set aside.
2. Heat the oil in a large skillet or wok over medium-high heat. (Reduce the heat if the oil begins to smoke.) Add the garlic and ginger and sauté until fragrant, about 30 seconds.
3. Add the thick-stemmed asparagus pieces and stir-fry for 1 minute. Add the thin-stemmed asparagus pieces and stir-fry for 1 minute. Add the aspara¬gus tips and stir-fry until tender-crisp, about 2 minutes.
4. Add the soy sauce-honey mixture and cook while tossing to fully coat the asparagus, about 1 minute. Sprinkle with salt. Transfer the asparagus with any remaining sauce to a serving bowl, sprinkle with the sesame seeds, and serve.
