Day four of the 12 Days of Holiday Cookie round-up brings a holiday classic cookie. These Soft Gingerbread Cut Out Cookies by Amber Ketchum, MS, RD of Homemade Nutrition, are nice and moist, but use slightly less sugar and butter than a typical cookie recipe. Amber thinks that the most important part of a cookie is the softness, so she still uses unsalted butter, but she also uses white whole wheat flour in place of some of the regular all-purpose flour for a little lighter twist.
