There’s almost nothing better than sitting down for a meal made straight from your home garden. In the summer, many home gardeners have tomatoes and cucumbers out the wazoo. They may have so much that they struggle to use all their produce before it goes bad. Here are some great ways to use that fresh garden produce before it ends up in the compost bin.

Ways to use Produce by Month

June

Strawberries

  • Refreshing sangria
  • Strawberry jam
  • Freeze berries for smoothies

Snap Peas/Beans

  • Roast and eat as a snack
  • Pickled snap peas

 

July

Cherry Tomatoes

  • Sun-dried Tomatoes
  • Slow-Roasted tomato sauce

Cucumbers

  • Homemade pickles
  • Cucumber Salad
  • Tzatziki Sauce

 

August

Beefsteak or Heirloom Tomatoes

  • Traditional pico de gallo
  • Pasta sauce (can be canned)
  • Blanch and can them
  • Stuffed tomatoes

Summer Squash

  • Spiralize
  • Baked summer squash casserole
  • Zucchini bread
  • Squash Ratatouille

 

September

Greens (Collard, Chard, Spinach)

  • Green smoothies
  • Add to stir fries
  • Slaw
  • Green lasagna

Peppers

  • Stuffed peppers
  • Roasted red peppers (can ‘em!)
