Growing up, we always had an Israeli-style chopped salad on the table. Today as a mom of three kids, you can still find this colorful and healthy salad on my table at most meals.It’s also my go-to salad to serve to my guests who always ask me for the recipe. *Photo courtesy of Gail Watson Photo
Ingredients
  • 2 medium cucumbers (about 1 pound)
  • 1 medium tomato (about ½ pound)
  • 1 yellow or red bell pepper
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
Instructions
  1. Chop the cucumbers, tomato and pepper and place in a medium bowl. Add olive oil, lemon juice, salt and pepper. Toss well to combine.
