08 Aug Recipe: Israeli-Style Salad
I’ve got a lot of Israeli blood in me—my mom is Israeli and I married a man from Tel Aviv. Growing up, we always had an Israeli-style chopped salad on the table. Today as a mom of three kids, you can still find this colorful and healthy salad on my table at most meals.It’s also my go-to salad to serve to my guests who always ask me for the recipe.
Israeli-Style Salad
Serves: 4 (¾ cup per serving)
Ingredients:
2 medium cucumbers (about 1 pound)
1 medium tomato (about ½ pound)
1 yellow or red bell pepper
1 tablespoon olive oil
Juice of 1 lemon
¼ teaspoon salt
1/8 teaspoon black pepper
Directions:
Chop the cucumbers, tomato and pepper and place in a medium bowl. Add olive oil, lemon juice, salt and pepper. Toss well to combine.
