16 Jan How To Cut the Sugar When Baking

I have the biggest sweet tooth and have since I was a little girl. Just typing the words cookies, brownies, and cupcakes makes my mouth water. Now that I’ve passed the big 4-0 (by a few years) I recognize that my metabolism has slowed down, and I just need to cut back on the sugar. For 2017, I’ve made it my New Year’s resolution to cut back on added sugar. I’ve now started experimenting with Truvia products, including their Baking Blend and Brown Sugar Blend.
The Nutrition Low Down of Traditional Baked Goodies
Just looking at the numbers it’s easy to see how the calories can add up quickly, especially when one cookie or brownie isn’t quite enough. Here are the average calories and grams of fat in traditional baked goods:
- Chocolate chip cookie (1 big): 190 calories, 9 grams fat
- Brownie: 230 calories, 9 grams fat
- Cupcake: 500 calories, 25 grams fat
- Apple pie (without any topping): 400 calories, 20 grams fat
What’s a baked goods lover to do?
Each year for Hanukkah I make sugar cookies. This year I continued this tradition, but made a batch using Truvia’s Baking Blend, which bakes and browns just like sugar but with 75% fewer calories per serving. I even whipped up a vanilla buttercream frosting using Baking Blend for half the batch.Per two cookie serving, it is 120 calories, 5 grams fat, and 3 grams sugar. Per 2 tablespoons of the buttercream frosting (which went on about half the cookies) it is 100 calories, 8 grams fat, and 6 grams sugar. I used 1 tablespoon of the buttercream frosting per cookie.
Truvia Baking Blend is blended with stevia leaf extract and cane sugar, and brings out the sweetness in your baked goods like cookies. Even better, my cookies came out moist and sweet, with 75% less sugar and 20% fewer calories per serving than the full-sugar version. To substitute in your favorite baked good, use half as much Truvia Baking Blend as you would sugar.
Family Baking Night
Baking is something I typically do with my 11-year old daughter Ellena, who has seen every episode of Cupcake Wars and is planning to open her own cupcake shop when she’s older. Ellena typically bakes with me, as you can see from the photos below.
Here’s Ellena kneading the dough before we placed it in the refrigerator for about 30 minutes.
We used our new “insect” cut outs that made us giggle. Apparently the butterfly shape was Ellena’s favorite, while my choice of the spider got boo’s.
Next, we baked the cookies for about 10 minutes and cooled them on a rack.
While the cookies were baking I whipped up the icing, but left the actual icing to Ellena who takes it very seriously (listening to her favorite television program, of course).
Here’s half the batch of iced cookies. My girls are fans of vanilla frosting on sugar cookies, but Truvia has a chocolate buttercream recipe if that’s more your style. The second half of the dough was also used to make cookies, but with some leftover colored sprinkles I had in my baking cabinet.
