Lemon Roasted Asparagus

Serves: 4 servings
  • 2 tablespoons olive oil
  • 2 lemons, 1 juices and 1 sliced
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 1 bunch asparagus (1 pound), washed and trimmed
  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk together the olive oil, juice of 1 lemon, garlic, salt, and black pepper. Add the asparagus and toss to evenly coat.
  3. Spread the asparagus is a single layer on a baking sheet. Top with the lemon slices.
  4. Place the sheet pan in the oven and roast until the asparagus is slightly browned, 8 to 10 minutes, tossing halfway through.
  5. Serve warm.
