Garlic-Herb Potato Wedges

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano flakes
  • ½ teaspoon dried thyme leaves
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 3 russet potatoes, washed and sliced lengthwise into eighths (2 pounds)
  1. Preheat the oven to 425°F.
  2. In a large bowl, whisk together the olive oil, garlic, parsley, oregano, thyme, salt, and black pepper. Add the potatoes and toss to evenly coat.
  3. Place the potatoes in a single layer on a baking sheet. Bake until the potatoes are browned and easily pierced with a fork, 25 minutes.
  4. Serve warm.
