Peanut Butter Banana Energy Bites

Serves: 8 servings
  • 1 medium banana, sliced
  • 1 cup old fashioned oats
  • ⅓ cup smooth peanut butter
  • 1 tablespoon Stevia brown sugar blend (like Truvia or Splenda) or 1 tablespoon agave
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  1. Place the banana, oats, peanut butter, brown sugar blend or agave, cinnamon, and vanilla extract in a blender and blend until smooth. Remove mixture and place in a medium bowl.
  2. Spoon 1 tablespoon of the mixture and place in clean hands. Roll to make a ball and place in a large container. Continue with the remainder of the mixture to make a total of 8 balls.
  3. Place 1 ball into each of 8 containers. Cover and place in the refrigerator for up to 5 days.
