Red Cabbage and Carrot Slaw

Ingredients
  • 2 tablespoons apple cider vinegar
  • Juice of 1 lime
  • 2 tablespoon olive oil
  • ½ teaspoon Stevia granulated sugar (like Truvia or Splenda)
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • ¼ head red cabbage, shredded (about 6 cups)
  • 2 carrots, peeled and shredded
  • ¼ cup cilantro, chopped
Instructions
  1. In a small bowl, whisk together the apple cider vinegar, lime juice, olive oil, Stevia sugar, salt, and black pepper.
  2. In a large bowl, add the cabbage, carrots, and cilantro. Mix to combine. Drizzle with the dressing and toss to evenly coat.
  3. In each of 4 containers place ¾ cup of the slaw. Cover and place in the refrigerator for up to 4 days.
