We are almost halfway through National Nutrition Month where are connecting with nutrition experts about their favorite global flavors. Today, we are hearing from Jani Leuschel. 

Fish Sauce

Fish sauce adds a funky-good flavor to marinades, dipping sauces, and dressings. The fermented condiment increases the satiety factor when added to foods. A staple seasoning in East and South Asia, it is easy to understand how this delicious ingredient has made its way into refrigerators around the world.

l use fish sauce to amp the taste of marinades, dipping sauces, and dressings. Fish sauce is an excellent ingredient choice for those following a low-fat diet since it is fat-free and as a fermented food may have some gut-health benefits. It’s also a decent source of iron and omega-3 fatty acids (from the anchovies). Although high in sodium, the amount used in a sauce, marinade, or dressing is small, so it will usually fit within a person’s daily allowance.

This recipe for Umami-ish Grilled Boneless Chicken Thighs combines fish sauce, soy sauce, lime juice, and peanut flavors. Enjoy!
