23 Mar 31 Days of Global Flavors for National Nutrition Month: Day 23
Today’s global flavor comes to us from a fellow registered dietitian and friend of mine, Sharon Palmer.
Chickpeas
Chickpeas are part of the eight neolithic founder crops of civilization. Chickpeas are part of the traditional Mediterranean diet, which is the founding diet of civilizations. And it’s also so versatile and delicious. Chickpeas are nutritious—they are rich in fiber, vitamins, and minerals, plus are a good source of protein. They are a great way to include more plant proteins in your diet.

I include chickpeas a few times per week as my plant protein source, on grain bowls, salads, casseroles, stews, and in hummus and even blended into baking. Here’s my recipe for Brown Rice, Chickpea, and Kale Salad with Ginger-Tahini Dressing. I hope you enjoy!

Posted at 18:20h, 12 JuneI never was a chickpea fan, but this is a neat article! I guess maybe I haven’t given them a fair shake, might rock some in a salad with a nice vinaigrette. I’m all about health!
