02 Jun Cookbook Review & Giveaway: Melt: The Art of Macaroni and Cheese
Most of us remember eating macaroni and cheese as a kid, and while our taste buds may have matured, it’s still a favorite comfort food for many. Melt: The Art of Macaroni and Cheese, gives that boxed version you once ate a complete makeover, creating recipes that are “both classic and chic.”
About the Book
With over 40 delicious recipes using real artisan cheeses and a variety of pastas, you’ll never look at macaroni and cheese the same again! Melt is the first book to modernize a classic American comfort food. Stephanie includes recipes that range from fresh salads to hearty casseroles, accompanied by beautiful, mouth-watering photos. Cheddar, avocado, lime and goat, fennel, edamame, and mint is just one of the flavor combinations you’ll find. There are also alternative cheese recommendations for each recipe, in case you can’t find the one called for or if you want even more diversity to your cheese répertoire. You’ll even fid suggested wine pairings and additional flavor combinations that complement the artisan cheese highlighted.
Drunken Goat with Edamame, Fennel and Rotini
Stephanie Stiavetti was kind enough to share with us this delicious recipe.
Serves 4
10 ounces rotini
10 ounces Drunken Goat, rind intact, cut into 1-inch cubes
5 tablespoons lemon juice
1 cup fresh-shelled edamame beans
1/4 pound fennel bulb, sliced paper thin (about 1 1/2 cups sliced)
4 tablespoons fresh mint leaves, cut into chiffonade
3 tablespoons chopped fennel fronds
3 tablespoons extra-virgin olive oil
Zest of 1 medium lemon
Sea salt
Freshly ground black pepper
Cook the pasta in salted boiling water until al dente. Drain through a colander and wash with cold water to cool. Drain the excess water. Toss all the ingredients together in a bowl. Taste the salad. If you feel it needs more lemon, herbs, salt, or pepper, then adjust and taste again. When it’s balanced to your satisfaction, serve and be amazed at how easy that was.
Alternative cheeses: Lamb Chopper, Midnight Moon
Wine pairings: Sauvignon Blanc, dry Riesling, Gruner Veltliner
Additional pairings for the cheese: edamame, honey, dates, fig jam

so, in short, I could totally use this cookbook to help determine what cheeses I’d use to make a GOOD mac n cheese!
