28 May Have You Tried Einkorn Spaghetti?
This post was sponsored by Grand Teton Ancient Grains. All opinions are my own.
Einkorn is one of the oldest cultivated grains and a true ancient grain. Often referred to as the earliest form of wheat, it has been grown for thousands of years. Recently, I had the chance to try several grains from Grand Teton Ancient Grains, including millet, rye, spelt, and their einkorn pasta. I also spoke directly with the farmer behind Grand Teton Ancient Grains, who owns and operates their regenerative organic farm and mill. Between their thoughtful approach to farming and the quality and flavor of the products, I was genuinely impressed. Below you’ll find more information about my latest discovery, einkorn spaghetti and how you can try it for yourself.
Einkorn 101
Einkorn is considered one of the earliest forms of wheat cultivated by humans. It was grown by the first farmers of the Fertile Crescent more than 10,000 years ago. It is different from other varieties of wheat because it is the only wheat never to be hybridized, which is when two genetically different parents create an offspring with different traits.
After being grown for thousands of years, it was largely forgotten until 1991, when archaeologists discovered a naturally preserved man in the Italian Alps. Analysis of his remains revealed that his final meal included einkorn, underscoring its role as one of the oldest cultivated grains in human history. Today Grand Teton Farms grows, mills, and sells this delicious ancient grain.

Einkorn Pasta
Grand Teton Ancient Grains is an organic family farm and mill in Idaho. They use regeneratively grown organic einkorn, which means the crops are rotated, plant companion crops and cover crops in order to make the soil richer every year with a variety of nutrients. Grand Teton Farms goal is to leave the land better than they found it.
Their einkorn pasta is made with just one ingredient: stone-milled einkorn which is certified 100% USDA organic, non-GMO, and kosher. It’s also grown without chemicals like glyphosate.
After harvest, Grand Teton stone-mills the einkorn on site in their mill. The semolina flour then gets transferred to the pasta facility where it’s made into pasta in the artisan style through bronze spaghetti dies.
The pasta is created into four shapes:
- Spaghetti
- Linguine
- Angel Hair
- Fusili
To preserve the nutrients, fresh aroma and nutty-sweet einkorn flavor, every package of pasta is bronze-cut then slow-dried at low temperatures.
To prepare, simply add the pasta to a pot of slow boiling water and cook for 5 to 7 minutes. Don’t stir for at least one minute, after the spaghetti has softened. Once drained, toss it with your favorite sauce and compliment it with protein, healthy fats, and vegetables for a balanced meal. To store uncooked pasta, place in an airtight container and store in a cool, dry place out of the sunlight. To store cooked pasta, place in a re-sealable container in the refrigerator for up to 4 days.

The Nutrition Lowdown
Einkorn is a highly nutrient-filled grain. It contains notable levels of antioxidants, is higher in protein than modern wheat varieties, and may be less allergenic for some individuals compared to other forms of wheat.
For people with non-celiac gluten sensitivity, the type of gluten found in einkorn is often reported to be more easily tolerated and easier to digest overall compared to modern wheat. Due to the milling, more nutrients remain intact including iron, manganese, and vitamin B2.
Further, it also provides fiber, which helps promote satiety and may help lower the risk of chronic diseases like cardiovascular disease and certain forms of cancer, when consumed as part of a balanced diet.

Posted at 01:19h, 30 MayGreat practical advice. Published research suggests that methylated forms of B vitamins are better absorbed – especially when it comes to genetic variations affecting folate metabolism. Timing and form really matter for supplement effectiveness.

Posted at 23:16h, 30 MayThis is really helpful for consumers navigating this topic. One additional consideration – research shows bioavailable forms like magnesium glycinate have better absorption and fewer GI side effects compared to oxide forms. It can make a meaningful difference in outcomes.
