Ingredients
- Nonstick cooking spray
- 3 cups old-fashioned oats
- ¼ cup toasted wheat germ
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 2 large eggs, beaten
- 1½ cups nonfat milk
- 3 tablespoons sugar-free maple syrup
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 medium apple, unpeeled, cored and diced
Instructions
- Preheat the oven to 350-degrees Fahrenheit. Coat a 12-cup muffin tin with cooking spray.
- In a medium bowl, sift together the oats, wheat germ, baking powder, cinnamon, and salt.
- In a large bowl, whisk together the eggs, milk, sugar-free maple syrup, butter, and vanilla extract.
- Mix the dry ingredients into the wet ingredients until well combined. Fold in the diced apple until evenly distributed.
- Scoop of the batter evenly into each of the 12 prepared muffin cups. Tap the muffin tin a few times on the countertop to release any air bubbles.
- Bake in the oven until the edges of muffins are slightly browned and a toothpick inserted into the center of 1 or 2 oatmeal cups come out clean, about 45 minutes.
- Remove the muffin tin from the oven and set aside to cool for 15 minutes before transferring the muffins to a wire rack to continue cooling. Store oatmeal cups at room temperature for 5 days.
- To store: Place two oatmeal cup in each of 5 re-sealable containers and store at room temperature for up to 5 days. To freeze, place into re-sealable plastic bags or freezer-safe containers for up to 2 months. To defrost, place at room temperature overnight. Reheat in the microwave for 30 seconds before eating or enjoy at room temperature.

Posted at 09:34h, 28 SeptemberThese were very tasty! I don’t have a sifter, so they fell apart . Would a food processor work? Seems like the oatmeal needs to be ground up.
