Ingredients
  • 4 (6-ounce) cod fillets
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 3 oranges, slice 2 oranges and zest and juice of 1 orange
  • 4 scallions, chopped
  • 2 tablespoons lite soy sauce
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoon sesame oil
  • ½ teaspoon ground ginger
  • ½ teaspoon garlic powder
  • 1 teaspoons Stevia brown sugar blend (like Truvia or Stevia) or 2 teaspoons granulated sugar
  • ⅛ teaspoon chili flakes
Instructions
  1. If cooking right away, preheat the oven to 400°F.
  2. Break 4 large pieces of aluminum foil or parchment paper.
  3. Sprinkle the cod with the salt and black pepper and place in the center of the foil or parchment
  4. paper. Top each with an even amount of orange slices.
  5. In a small bowl, whisk together the orange juice and zest, scallions, soy sauce, rice vinegar, sesame oil, ginger, garlic powder, brown sugar blend, and chili flakes. Spoon the orange juice mixture evenly over each of the cod fillets.
  6. At this time, you can seal the foil or parchment paper and store in the refrigerator for up to 2 days and cook as needed.
  7. To cook, place up to two packets on a baking sheet and roast until the fish is opaque and reaches and internal temperature of 145°F, about 10 minutes. Using a sharp knife, carefully cut several 3-inch slits into the package to allow the steam to release.
  8. Place cooked fish with contents into each of 4 containers and store covered in the refrigerator for up to 4 days.
