Ingredients
- 1½ pounds green beans, washed and trimmed
- 1 tablespoon olive oil
- 2 cloves garlic, chopped
- 3 tablespoons orange juice
- 1 teaspoon orange zest
- ½ teaspoon dried thyme leaves
- ¼ teaspoon salt
Instructions
- Fill a large saucepan with 1-inch of water and fit with a steamer basket. Add the green beans, cover,
- and cook on high to bring the water to a boil. Continue cooking until the green beans are cooked yet
- firm, 5 minutes. Remove the green beans immediately and place in a large bowl.
- Heat the olive oil in a large sauté pan over medium heat. When the oil is shimmering, add the garlic and cook until fragrant, 30 seconds. Add the green beans and toss to combine. Add the orange juice and zest, thyme, and salt and toss to evenly coat the green beans. Continue cooking until half the orange juice is evaporated, 2 minutes.
- In each of 6 containers place 1 cup of the green beans. Cover and place in the refrigerator for up to 4 days or in the freezer for up to 2 months.
- To defrost, place in the refrigerator overnight. To reheat, place in the microwave uncovered and cook on high for 45 seconds minute.
