Ingredients
  • 1 (15-ounce) can low sodium cannellini beans, drained and rinsed
  • 2 cups baby spinach
  • 1 clove garlic, crushed
  • 1 tablespoon extra-virgin olive oil
  • Juice of 1 lemon (2 tablespoons)
  • ¼ teaspoon dill weed
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 20 cherry tomatoes
  • 5 mini cucumbers, sliced
Instructions
  1. Place the beans, spinach, garlic, olive oil, lemon juice, dill weed, salt and black pepper in a blender and blend until smooth.
  2. Spoon the dip into a serving bowl and serve with the tomatoes and cucumbers.
