Ingredients
- 1 (15-ounce) can low sodium cannellini beans, drained and rinsed
- 2 cups baby spinach
- 1 clove garlic, crushed
- 1 tablespoon extra-virgin olive oil
- Juice of 1 lemon (2 tablespoons)
- ¼ teaspoon dill weed
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 20 cherry tomatoes
- 5 mini cucumbers, sliced
Instructions
- Place the beans, spinach, garlic, olive oil, lemon juice, dill weed, salt and black pepper in a blender and blend until smooth.
- Spoon the dip into a serving bowl and serve with the tomatoes and cucumbers.
