Ingredients
- 2 tablespoons apple cider vinegar
- Juice of 1 lime
- 2 tablespoon olive oil
- ½ teaspoon Stevia granulated sugar (like Truvia or Splenda)
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- ¼ head red cabbage, shredded (about 6 cups)
- 2 carrots, peeled and shredded
- ¼ cup cilantro, chopped
Instructions
- In a small bowl, whisk together the apple cider vinegar, lime juice, olive oil, Stevia sugar, salt, and black pepper.
- In a large bowl, add the cabbage, carrots, and cilantro. Mix to combine. Drizzle with the dressing and toss to evenly coat.
- In each of 4 containers place ¾ cup of the slaw. Cover and place in the refrigerator for up to 4 days.
